Rhubarb BBQ Sauce
Ingredients
1 cup rhubarb, diced
2 oz. non-alcoholic beer
1/4 cup yellow onion, diced
1 tsp garlic, chopped
1/4 cup apple juice
1/2 tsp beef base
1/2 cup ketchup
1 Tbsp BBQ sauce (any type)
1 tsp Worcestershire sauce
1/4 tsp liquid smoke
1 Tbsp Dijon mustard
2 Tbsp cider vinegar
1 Tbsp brown sugar
1 tsp balsamic vinegar
1/4 tsp dried oregano
1/4 tsp dried thyme
Pinch granulated garlic
Pinch onion powder
Method
Place rhubarb, onion, garlic, beer, apple juice, beef base and vinegars into sauce pan and bring to a boil. Reduce heat and simmer until rhubarb is tender and breaks down. Add remaining ingredients, bring to a simmer and simmer 15 minutes. Strain through a fine mesh china cap, pressing all the liquid through. Achieve desired thickness by reducing over medium heat.
Yields two cups.
