Gourmet Potato Salad
Ingredients
1 lb “C” size creamer potatoes, mixed red and white
½ cup celery, bias-cut
½ cup fennel bulb, bias-cut (shaved, no core)
½ cup scallion, bias-cut, whites only
1/8 cup parsley, chopped
1/8 cup fresh dill, chopped
1 Tbsp whole-grain mustard
2 Tbsp extra virgin olive oil
3 tsp sherry vinegar
salt and pepper to taste
Method
Boil potatoes in salted water. Drain, cool and quarter.
Place potatoes in a mixing bowl, toss with all other ingredients. Salt and Pepper to taste.
Serve at room temperature.
Yields two servings
