Festive Fruit, Nut and Wild Rice Salad
Dressing Ingredients
- ¼ cup Dijon mustard
- 1 cup raspberry vinegar
- 3 cups olive oil
- ½ cup orange juice
- 4 Tbsp orange zest
- kosher salt to taste
- pepper, freshly ground, to taste
Dressing Method
In a bowl, combine the Dijon mustard and raspberry vinegar with a whisk.
Slowly whisk in oil and then add remaining ingredients and mix well.
Salad Ingredients
- 1 lb wild rice, cooked
- ½ lb long-grain rice, cooked
- 2 fresh pears, sliced
- ¼ cup red bell peppers, diced
- ¼ cup scallions, chopped
- ¼ cup pecans, toasted and chopped
- ¼ cup dried cranberries
- 1/8 cup parsley, chopped
- 1/8 cup cherries, dried
Salad Method
In a stainless steel bowl, combine all salad ingredients and mix well.
Fold dressing into salad mix.
Cover and refrigerate.
Serve garnished with cranberries, pears and parsley.
Serves 12 to 15 people.
